Baked Peaches with Olive, Fig & Almond Jam

This is a really delicious, quick, unusual dessert that adds some sophistication to the humble peach!

I found this fantastic Sweet Olive, Fig & Almond jam made by Olive Branch at Brockley Market here in south London – perhaps you can find a similar product at one of your local food markets, or try making it yourself! I’ll be honest that I was a bit skeptical at first – olives in a sweet dish?? – but it is really delicious and works brilliantly with both sweet and savoury foods, so give it a go! We have a fig tree next door that drops loads of figs into our garden, so I’m keeping my eye on them and will rescue some from the ground when they drop.

Peaches are just about to come into season here in the UK, so store this recipe up and make it once you’ve found the best-smelling peaches you can. If peaches don’t really smell of anything, they won’t taste of anything either.

So without further ado, here’s how I made Baked Peaches with Olive, Fig & Almond Jam – it’s very simple so doesn’t really count as a recipe!

1. I halved two peaches and arranged them in an oven-proof dish. I then blobbed-on some of the jam and sprinkled with flaked almonds. But I think what YOU should do is marinate the peaches in the jam and some marsala wine (or sweet sherry), then arrange in the dish ;-) I’ll be doing that next time.

2. I poured a little water into the base of the dish, just to save the peachy syrup (which I assumed would appear) from scorching.

3. I baked the peaches at 200º for around 20 minutes and ate with a spoonful of greek yoghurt to offset the sweetness.
